With Scalability Pro, are the changes that the plugin makes reversible in the event that the plugin is not needed?

There’s a "Drop All Indexes" button in the Indexes tab of Dashboard > Settings > Scalability Pro. Make to to click this before deactivating Scalability Pro and the changes will be reversed.

I don’t have this "Drop all indexes" button on the Indexes tab. How would I go about reversing all changes before uninstalling?

You can just uninstall now and we delete the indexes for you and everything is back to normal, unless you had your term recounts switched off for a while in which case you might need to visit WooCommerce > Status > Tools > Recount Terms
